What's for supper?


We have been cooking on the barbecue quite a bit lately and we wanted a change for supper this evening so I decided I would make lobster rolls. We made a trip to our local fish market and purchased a tub of lobster meat. This makes the process easier as I don't have to shell lobsters and we get more meat per pound for our money - which means larger lobster rolls!

There are two size meals in our house:

- the gal meal; and


- the guy meal!

Recipe for Lobster Rolls (makes 3 to 4)

1 pound lobster, cut into small pieces
1 large celery stick, finely chopped
1 green onion, finely chopped
1/4 cup light mayo, (or to taste)
a squeeze of fresh lemon
salt and pepper, to taste
lettuce, optional
hot dog size rolls

In bowl, mix first 7 ingredients together.

Lightly butter outer sides of rolls and place in a non-stick fry pan to toast, turning side to side, as necessary.


Spoon mixture into hot, toasted rolls. Serve with potato salad or homemade oven fries.
